Flax PB Chocolate Chip Cookies – Lactation Cookies

As the little hand of my nephew reached into the cookie jar, followed by my brother in-law, sister and me… I looked around to see the expressions on their faces after biting into these über healthy chocolate chip cookies for tonight’s dessert. Was it the nutty flax meal, the creamy natural peanut butter or the sweet chocolate morsels…that gave the ‘ummm’ response? I think it was a combination of all!

The addition of ‘Brewer’s Yeast’ is also an ingredient in these heathy little treats. This was the secret ingredient in the Lactation Cookies I made a few weeks ago.  I have an abundance of Brewer’s Yeast as I had to buy an entire canister of this good stuff when I only needed a few tablespoons! I am sure you have been in that same sitution…go to the store and realize a) your size you want is sold out or b) there is NO bulk options and you have to buy the larger canister of whatever you needed. SO, I will be coming up with creative ways to utilize this good stuff either though baking tasty treats or sprinkling some into my green smoothies. Either way, these cookies are delicious and I am glad I could bring these over to my sister’s family for all to enjoy and hopefully they will have the same effect for my sister being a new mama too!.

Recipe slightly altered from: Peaceful Parenting


  • 1 1/2 Cups Whole Wheat Flour
  • 1 TSP Baking Soda
  • 1 TSP Salt
  • 1 TSP Cinnamon
  • 3/4 Cup Natural Peanut Butter
  • 1/2 Cup Organic Butter
  • 1/2 Cup Sugar
  • 1/2 Cup Brown Sugar
  • 1 TSP Vanilla
  • 3 TBS Brewer’s Yeast
  • 1 Cup Flax Meal
  • 1/3 Cup Water
  • 2 Large Eggs
  • 1 3/4 Cups 5 Grain Cereal
  • 1 Bag Milk Chocolate Chips

  1. In small bowl combine: Flour, Baking Soda, Cinnamon, and Salt
  2. In large bowl combine: Peanut Butter, Butter, Sugar, Brown Sugar, Vanilla, Brewer’s Yeast, Flax Meal, and Water – combine until creamy
  3. Add: Eggs
  4. Slowly Add: Flour mixture
  5. Add: 5 Grain Cereal and Chocolate Chips
  6. Place on parchment paper lined cookie sheet by the teaspoonful
  7. Bake for 10-12 minutes

OVEN: 350

Yield: 4 Dozen (I like to make 2 dozen at a time and freeze the other dozens by the dough balls for future use)

Wedding: Family Photos

What a flurry the past few months have been! Lots of fun and exciting events occurring at Corner Bungalow. I however, must finish our wedding story first!

Our wedding day would not have occurred without our family below. Nick and I are eternally grateful for the foundation our parents built for us. They have truly been our inspiration for our lives ahead. My dad has this great quote in his office…

I have always found this quote to bring a smile to my face and even shared it with friends and colleagues as it is totally true!

Ours parents have instilled the belief you have to work for what you want; you will then truly understand the value of what you have.  For example…Knowing that everything would be ok when we had to tap into the wedding fund which became the emergency fund when our 1925 bungalow needed  some (well a lot ) of unexpected TLC while planning the wedding.

Having a strong worth ethic and passion for what you love is what I will ensure is also instill into our children one day…years to come.   No matter the circumstances our parents and family will always be there for us as will we for them over this lifetime.

Corner Bungalow and Zenith City Indie Wedding Show

I am beyond excited to announce that Corner Bungalow will be a vendor at the Zenith City Indie Wedding Show this upcoming weekend 4/29/12 in Duluth MN! I have been making pretty bridal and bridesmaid hair flowers and my new tartan plaids just got shipped from Scotland today for the neckties! I will be whipping up  some handsome ties just in the nick of time for Sunday. This is my first show being a ‘vendor’ and not a bride! I can’t wait to talk to the lovely brides and grooms-to-be.

My amazing husband has offered up, well I pretty much begged him to help…well the conversation went like this.

Me: ‘I would love if you could come help me with the show, it will be really fun, plus you can run the necktie side of Corner Bungalow.’

Nick: ‘What do I get out of this deal?’

Me: ‘What do you want?’

Nick: ‘To go on any climbing trip I want over Memorial day’

Me: Deal

Nick: I have already planned a trip to Red Rock.

So that being said,  Zenith will have both of us there! Nick will be a rock-star like he always is and will be sporting a new tartan tie as well.

This past weekend has been a flurry to get things prepped! My very lovely sister, pregnant with twins, even modeled the 20 + new items I will be adding to Corner Bungalow! I can’t wait to give a recap next week after the event. I am sure the night will just fly by. The show is not your typical bridal fair, but more a night out with your guy while planning your big day. I feel so honored to be apart of the amazing night!

Cute Crochet Amigurumi

This was my first attempt to make amigurumi crochet toys for my nephew and niece.  They are stuffed with poly fill for softness and have a little stocking of plastic pelts inside so they sit up. They were SO fun to make and seeing their faces upon opening the boxes was delightful! They come with a lifetime guarantee for repair from auntie:)

Cozy Baby Blankets and Burp Cloths

With my second niece on the way, I met my sister in-law and my 5-year-old niece to choose fabrics for these cute baby blankets and burp cloths.  I see a little designer in the making in my niece after our shopping trip!  She quickly picked out coordinating fabrics and made sure there was no bolt of fabric that went untouched. I rounded the corners on the blankets to ensure smoothness and softness.

Fiber: 100% Cotton

Coordinating burp cloths match back to the blankets. Tied sweetly with a little raffia.
